Honey Almond Stuffed French Toast with Maple Blackberry Sauce

 

Some of you might not know that I’ve been writing another blog for a year and a half called Fab Find Foodie.  Recently I was asked to participate in the I Can’t Believe It’s Not Butter Toast Ambassador Contest where I had to create a recipe using tosated bread and a product from the ICBINT line.  (This recipe was part of my entry into the contest.)

I’m somewhat of a stuffed french toast nut, so as soon as I accepted the challenge I knew that’s what I would be making.  I figured since summer is finally here, what better time to use juicy berries and make them into a “syrup” of sorts.  The thing about french toast is the although the bread gets nice and crispy,  I like to give it an additional crunch.  This time around, that crunch was toasted sliced almonds.

You’ll be surprised how easy it is to make this recipe. There’s no baking required, and because you cook the sauce and toast the almonds while you’re making the french toast, you’ll have breakfast in no time! This delectable french toast may look rich, but the slighly sweet and tangy blackberry sauce really cuts through the richness of the cream cheese.  I hope you enjoy!

INGREDIENTS

-8 slices of Cinnabon Cinnamon Bread with Cinnamon Bursts.
-8 oz. container of whipped cream cheese (I used Philadelphia brand)
-6 oz. container of fresh blackberries
-1 oz. sliced natural almonds, toasted
-3 large eggs
-1/4 c. milk
-1/4 tsp. fresh squeezed lemon juice
-1 tbsp. plus 1 tsp. honey, divided.
-1/8 c. sugar
-1 tbsp. maple syrup
-1 tsp. pure vanilla extract
-1/3 c. plus 3 tbsp. I Can’t Believe It’s Not Butter Whipped and Creamy Taste, divided

STEP-BY-STEP DIRECTIONS

 

Add 1 tbsp. of honey directly into the 8 oz. container of whipped cream cheese and store in the refrigerator until ready to use.


Add almonds to a dry non-stick pan and toast over medium heat for 10 minutes until lightly golden. (You’ll be able to smell them.)


In the meantime, add entire container of blackberries into a small saucepan and add lemon juice and sugar. Cook over medium-high heat for 10 minutes, stirring occasionally. Slightly mash half of the blackberries with a fork as they begin to soften. Add maple syrup into the blackberry sauce and mix well.


Once you get the sauce going, beat 3 eggs, milk and vanilla in a shallow baking dish until completely combined.  Dip two both sides of bread into the egg mixture, and let the excess drip off. Repeat with each additional pieces of bread.


On a large electric griddle over medium-high heat (or in a non-stick skillet), add 3 tbsp. of I Can’t Believe It’s Not Butter Whipped and Creamy Taste.  (If you’re using a skillet, just use a tbsp. of butter for each batch.)  Once the ICBINT is melted and starts to bubble, add the pieces of dipped bread onto the griddle (or into pan).


Toast bread for 4-5 minutes, then flip over and cook an additional 3 minutes, until a nice golden brown.


When you remove the french toast, make sure to place the hot sides down on the plate.   Top each piece of french toast with 1 heaping tbsp. of whipped honey cream cheese and slightly spread onto the bread.



Sprinkle each piece with 1/4 tsp. toasted almonds.


 

Top with the second piece of french toast, hot side up.  This way the cream cheese will start to slowly melt, but will not completely like ice cream in the hot Texas sun!




Add 1 tsp. of honey-butter on top of the stuffed french toast, then pour 1/4 cup of warm maple blackberry sauce over each piece and serve.


 
Now it’s time to cut into this creamy stuffed french toast a get yourself a big bite!
